The other side of Mugaritz. A journey into the heart of the project headed by chef Andoni Luis Aduriz. For just two days, it will offer a journey through the inside story, the obsessions, the peculiarities and the logical and illogical aspects that have paved the way for the project that started over 25 years ago on a new frontier.

Driven by our vocation for creativity, we want to offer a unique experience allowing us to share, with curious diners and food lovers alike, the determination with which Mugaritz insists on redefining what a restaurant is supposed to be, as well as explore concepts such as flavour, pleasure and the act of eating and drinking itself.

This is an opportunity to enjoy Mugaritz from another angle, to look at things upside down and observe what goes on around Mugaritz (and not just what comes out of its kitchen and/or reaches the tables).

Conceptualised together with the dancer Jon Maya (Kukai Dantza) and the writer Harkaitz Cano.

It is an immersive and participative experience to show the heart of Mugaritz; everything you don’t see in a conventional gastronomic experience. A shift through spaces, dynamics and realities that are not always visible, but which nevertheless support the functioning of an ecosystem such as Mugaritz,in addition to enjoying the gastronomic proposal and the Vis à Vis pairing of the 2024 season. There will be plenty of interaction throughout the day, whether between diners, between tables or with the Mugaritz team itself.

Due to the complexity involved in producing the experience itself, all attendees will be offered the same food and drink. If diners have any allergies or intolerances, we will advise them so that they can avoid what they are unable to eat.

The price per person is €660 (VAT included). The final price includes both the culinary proposal and wine pairing.

The dress code is comfortable; please wear clothing that will allow you to move around our spaces in a relaxed and casual way.

At the time of making the reservation request, full payment will be taken for the reservation, €660 per person (VAT included). The reservation can be cancelled and the full amount will be refunded up to one month before, that is to say 26 September (including this date). From 27 September onwards, the reservation may be transferred to a third party, but it cannot be cancelled and no refund will be issued (except in cases of duly justified force majeure).

The experience will take place in Spanish.

The experience will last around five hours. It will start at 12:00 and will finish at around 17:00.
